This super quick and easy version of Frito pie casserole from Catherine’s Plates on Youtube has all the flavors of our favorite corn chips but in a much quicker preparation. Preheat the oven to 350 degrees F. Next, in a large skillet over medium-high heat, add 1 tbsp of cooking oil, then add chopped onion. Cook it for a few minutes until nice and soft. After the onion got some color, add the ground beef and break it up. Cook it until it is browned. After the ground beef is browned up, drain the grease off the pan, then season it with 1 packet of taco seasoning. Next, add 1 can (14 oz) of diced tomatoes, 1 can (10 oz) of drained corn, 3/4 cup of sour cream, and 1 can (4 oz) of green chilis. Turn off the heat and mix it all together to combine.

Now, you can add 1/4 cup of salsa if you want a little heat and more flavor. Next, start assembling the casserole. Add half of the meat mixture to the bottom of the casserole dish, followed by half of the 10 oz bag of Fritos corn chips, then 1 cup of shredded cheese. After this, add the rest of the meat mixture, the Fritos, and another cup of shredded cheese. Place it in the preheated oven and bake for about 20 to 25 minutes until the cheese gets nice, bubbly, and golden brown. After baking, garnish it with some chopped green onions.
