In the first bowl, add 1/2 cup of all-purpose flour, 1 tsp salt, and 1/4 tsp ground black pepper. Mix well and set aside. In the second bowl, beat two eggs and set aside. For the third bowl, add 1 1/2 cups of panko bread crumbs. Now, slice your zucchini 1/2″ thick rounds, then start assembling your station. Dredge the first slice of zucchini into the seasoned flour, then into the beaten egg, and finally into the bread crumbs. Repeat these steps until you have all your zucchini slices coated. Place them in a baking tray.

Once you’re done, heat some oil in a pan over medium heat (make sure the oil is covering the bottom of the pan). When the oil is hot, gently place the zucchini and cook each side for two minutes or until they are golden brown and crispy. After frying, set them aside and make the sauce. In a bowl, combine 1/3 cup mayonnaise, 1 grated garlic clove, 1/2 tbsp lemon juice, 1/4 tsp salt, and 1/8 tsp ground black pepper. Mix well. Serve your zucchini together with the garlic aioli sauce!
