Ingredients:

  • 8 oz bowtie pasta
  • 2 cups English cucumber, diced
  • (1 1/2 cups) cherry tomatoes, halved
  • 1 bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 1 cup crumbled feta cheese
  • 1/2 cup pitted Kalamata olives, roughly chopped
  • 1/4 cup parsley, finely chopped

Greek Salad Dressing:

  • 1/3 cup red wine vinegar
  • 1 tsp dried oregano
  • 3 garlic cloves, grated
  • 1 tsp fine sea salt
  • 1/2 tsp ground black pepper
  • 1/2 – 2/3 cup extra virgin olive oil

Directions:

Step 1

To start, cook your pasta according to its package instructions. After cooking, drain the pasta into a colander and set aside. Next, make the dressing. Combine 1/3 cup red wine vinegar, grated garlic, 1 tsp dried oregano, 1 tsp fine sea salt, 1/2 tsp ground black pepper, and 2/3 cup extra virgin olive oil in a jug, and mix until well combined. Set aside.

Step 2

Now, start building the pasta bowl. Add the drained pasta into a large bowl followed by the chopped English cucumber, bell pepper, cherry tomatoes, red onion, Kalamata olives, finely chopped parsley, and 1 cup of crumbled feta cheese. Once done, drizzle the dressing on top (add this to taste), then mix the salad. Serve and enjoy!
