Salad is an essential part of my diet, and one of my go-to salad recipes is this green goddess salad from The Domestic Geek on Youtube. This version is a bit lighter compared to the traditional one, and I prefer it more. It’s loaded with incredible flavors and has a perfect crunchy texture. Ingredients:

For the dressing:

  • 1/2 cup plain Greek yogurt
  • 1/2 avocado
  • 1 lemon, juice
  • 1 garlic clove
  • 2 green onions, chopped
  • 1/4 cup fresh parsley leaves
  • 1/4 cup fresh dill leaves
  • 1/4 cup fresh tarragon leaves
  • 1 tsp Worcestershire sauce
  • 2 tbsp olive oil
  • salt and pepper, to taste

For the salad:

  • 2 cups cooked quinoa
  • 2 cups finely chopped kale
  • 2 cups shredded green cabbage
  • 1 cup finely chopped broccoli florets
  • 1 tbsp olive oil
  • 1/2 lemon, juice
  • 1/2 English cucumber, sliced
  • 4 large eggs, boiled and sliced
  • salt, to taste

Directions:

Step 1

Add 1/2 cup Greek yogurt, half of an avocado, juice of one lemon, one clove of garlic, two chopped green onions, 1/4 cup fresh parsley leaves, 1/4 cup fresh dill leaves, 1/4 cup fresh tarragon leaves, 1 tsp Worcestershire sauce, 2 tbsp olive oil, and salt and pepper to taste to a food processor (or blender). Pop the lid on and blend it well. If the consistency is a bit thick, you can thin it out by adding some more olive oil. Set it aside.

Step 2

Add 2 cups of cooked quinoa to a big mixing bowl followed by 2 cups of finely chopped kale, 2 cups of shredded green cabbage, and 1 cup of finely chopped broccoli florets. Drizzle 1 tbsp olive oil and add the juice of half a lemon. Season with some salt to taste, then toss them until well combined. Transfer to a serving plate, top it with some slices of English cucumber and sliced boiled egg, then drizzle the dressing over. Serve and enjoy!
