What’s more refreshing than this fresh cucumber salad by Yin & Yang Living? It’s light, tasty, and perfect for every day. The homemade lime dressing has all these amazing flavors that complement well with cucumber, scallion, and red onion. I especially love the red hot pepper flakes – it gives a nice kick to this simple recipe. Make sure to try this during the spring and summer seasons!
Ingredients:
- 1 large cucumber
- 1/4 of a large red onion
- 2 stalks of scallion
For the dressing:
- lime
- 2 tablespoons of rice vinegar
- 2 tablespoons of fish sauce
- 2 tablespoons of non-flavored oil
- 1 tablespoon of honey
- 1 teaspoon of red hot pepper flakes
Note: you can lessen or add more hot pepper flakes to your sauce depending on your preference

Instructions:
Step 1:
Remove the ends of the cucumber and slice it into 3 pieces. Shred the cucumber into long pieces using a shredder. You want to shred it with the long side flat and not perpendicular to the blade. Once done, transfer it into a bowl. Repeat with the remaining cucumber slices.
Step 2:
Cut the onion into thin slices then add to the cucumber. Next, dice the scallions and add them to the bowl. Set it aside.
Step 3:
Make the dressing. Slice the lime in half and squeeze to get all of the juice. Make sure to remove the seeds. In a medium size bowl, add the lime juice, 2 tablespoons of rice vinegar, 2 tablespoons of fish sauce, 2 tablespoons of non-flavored oil, 1 tablespoon of honey, and 1 teaspoon of red hot pepper flakes. Mix until well combined.
Step 4:
Get your cucumber mixture and pour the lime dressing that you made. Give it a toss using your tongs. Make sure that everything is well coated with the sauce.
Step 5:
Serve this cucumber salad on a plate while it’s freshly made. Enjoy!
