Preheat the oven to 400 degrees F. Peel and chop the potatoes, then place them in a pan with cold water. Bring it to a boil and cook for 15 minutes. After 15 minutes, drain the potatoes, mash them, and put them in a bowl. Add 3 tbsp of butter, 3 tbsp double heavy cream, and a pinch of salt and pepper. Mix well. Next, in a pot, pour 2 & 1/2 cups of full-fat milk and add 2 salmon fillets and 2 cod fillets. Bring it to a boil and cook for about 3 minutes. Add the raw prawns at the last minute.

Transfer the fish to a baking dish, remove the skin and flake the fish apart. Pour the cooking liquid/milk into a mixing jug and set it aside. After this, add 1 & 1/2 tbsp of butter is a pot and melt it over medium heat. Once it’s melted, stir in 2 tbsp of all-purpose flour and cook it for a minute. Add the reserved milk slowly into the pot while mixing it. Add 1 & 1/2 cup of grated mature cheddar cheese. Mix it then remove from heat. Pour the sauce over the fish in the baking dish and spoon over the mashed potato. Sprinkle some more cheddar cheese then place it in the oven. Bake it for about 15 to 20 minutes until the cheese is melted and golden.
