To start, cut the salmon into bite-size pieces. Transfer them to a bowl and add 2 tbsp of hot sauce and 1 quart of buttermilk. Massage all that in and let the buttermilk work to tenderize the salmon a bit. Set it aside. Next, make the Asian slaw. In a large bowl, add 1/4 cup olive oil, 2 – 3 tbsp honey, 1 tsp garlic paste, 1 tsp ginger paste, 1/2 tsp sesame oil, 2 tbsp rice wine vinegar, 1 tbsp soy sauce, and some all-purpose seasoning. Mix well to combine, then add the shredded cabbage and toss everything well. Moving on to the bread, slice the hoagie roll just to make a pocket for your salmon later, then spread some butter inside.

For the firecracker sauce, combine 1 cup of mayo, 1/4 cup of sriracha, 1/4 cup sweet chili, 1 tbsp honey, a few dashes of sesame oil, 1 tbsp soy sauce, and all-purpose seasoning to taste. Mix well. Next, add some AP seasoned flour to a mixing bowl, then coat the marinated salmon bites with it. After this, gently drop the coated salmon bites into 350-degree oil and fry for five minutes or until golden brown. Once done frying, transfer them to a mixing bowl and drizzle in the firecracker sauce. Toss well. Now, assemble the sandwich. Place the Asian slaw first to the hoagie roll followed by the salmon bites. Drizzle some more sauce on top, then serve.
