The famous Applebee’s Fiesta Lime Chicken is surprisingly easy to make at home. Evolving Table on YouTube shares this copycat dish baked in the oven to cheesy perfection. With its juice and tender chicken breasts that are coated in a creamy and tangy sauce and topped with cheesy goodness, you’ll be craving for more.
Ingredients:
Salsa Ranch
Optional:
Directions:
Prepare all the needed ingredients.
Preheat the oven to 350F.
Slice the chicken into four parts that are 5–6 oz each. With a meat mallet, pound the chicken to tenderize it until it is 1 inch thick.
In a large mixing bowl, whisk together lime juice, soy sauce, taco seasoning, Worcestershire sauce, olive oil, honey, and ½ teaspoon salt. Make sure to get rid of any clumps. Add the sliced chicken to the bowl and marinate in the refrigerator for at least 30 minutes to an hour.
Once the chicken is ready, place it in a 13″ x 9″ baking dish. Make sure to leave a little space between each chicken slice and let any excess marinade drip off before adding it to the dish. Place the dish in the oven at 350 F to bake for 20–25 minutes.
While the chicken is baking, prepare the salsa ranch sauce by combining the needed ingredients in a medium-sized bowl. Once the chicken is almost ready, add 1-2 tbsp of sauce over each breast and place 1 slice of cheese on each.
Return the dish to the oven to cook for another 5 minutes, or until the cheese is melted. When ready, place the chicken on serving platters and serve together with tortilla chips, sauce, lime wedges, pico de gallo, cilantro, and a side of Mexican rice.
Serve and have fun!
