I was just starting to get into the groove of gardening and planting, and I’m looking for a lot of tutorials on Youtube to make my journey successful. While browsing the other day, I found this super helpful video from Epic Gardening. With this tutorial, I was able to grow my first batch of crops, and I couldn’t be any happier! Harvesting my own baby kale, bok choy, and some other greens and eating them right away was fulfilling. I also built confidence in growing crops, all thanks to Epic Gardening. This is the fastest crop you will ever grow. Microgreens are basically the same seeds you use to grow a plant to its full form, but you just plant way more of them, and plant them densely along a tray. They’re fast, highly nutritious, and you can cycle-grow them.
Peas are very easy to sprout and once they come up, you can eat them right away. Sunflowers, on the other hand, retain their nutty flavor, kind of like a greener version of a sunflower seed.
If you let your microgreens go a little longer, you can harvest a micro head of lettuce. Take note that if you’re planning to specifically harvest at a younger stage of life, then your spacing should be different.

You can actually eat the greens of all root crops. You can grow beet greens and radish greens and you can just harvest them for their greens before they start to bulb out. They germinate fast and grow fast. Baby radishes, specifically, can definitely be harvested at the 30-day mark.
Baby kale is often times more tender, a little bit fibrous, and very tasty. They are much easier to use in a salad especially if you don’t like crunching through the mature kale. Another extra green that you can grow in less than 30 days is bok choy.
