Chicken salad is one of my favorite dishes, and I usually make it the old-fashioned way, with eggs, celery, onions, mayonnaise, and pickles. There are only a few ingredients in this recipe, and I added some chopped pecans to make it really rock. This chicken salad can be served on any bread, but the very best way to eat it is on a fresh croissant roll. One of my very favorite ways to eat chicken salad is to have a scoop on top of a big salad. Eating chicken salad on a big bed of lettuce or baby greens really makes staying on my salad diet a whole lot easier.

  • 1 pound (4 cups) of cooked & diced chicken breast (a store-bought rotisserie chicken works great for this recipe)
  • 2 cups seedless grapes (halved)
  • 1 cup (2 or 3 sticks of celery)
  • 1/2 cup of red onion (finely chopped)
  • 1 cup of roasted pecans (coarsely chopped)

For The Dressing:

  • 1/2 cup of mayonnaise
  • 1/2 cup of sour cream (or plain Greek yogurt)
  • 2 tablespoons of lemon juice
  • 2 tablespoons of chopped dill
  • sat and pepper (to taste)
