Ingredients for Zucchini Casserole:

  • 3 medium zucchini
  • 1 small onion
  • 4 large eggs
  • ¾ cup of all-purpose flour
  • ½ cup + 2 tbsp of parmesan cheese, grated
  • ½ cup of breadcrumbs
  • 1 tsp of instant yeast or baking powder
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • 1 tbsp of basil
  • 4 tbsp of olive oil

How to Make Zucchini Casserole:

Step 1

Preheat your oven to 180°C or 350°F, cut the zucchini into thin slices, and chop the onions. Add the zucchini slice and chopped onions to a large bowl, then beat the eggs, and add them to the same bowl followed by the flour, parmesan cheese, breadcrumbs, instant yeast, salt, black pepper, olive oil, and chopped basil.

Step 2

Mix everything until fully combined and evenly coated, then get an 8×8-inch baking dish and grease it well with olive oil. Transfer the zucchini mixture to the pan, then spread it evenly, and press it down gently. Add more parmesan cheese on top, then place it in the preheated oven, and allow it to bake for about 1 hour or until the top is golden brown. Serve it warm and enjoy!
