I was never a big fan of zucchini before until I discovered this recipe by Sugar Spun Run on YouTube. This cake is so good and delicious, that I didn’t even notice the zucchini in it, I also enjoyed the texture of the cake to the point that I just can’t stop eating it. This is definitely a dessert that I will make more often in the future.

Ingredients:

Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup light brown sugar, firmly packed
  • 1½ tsp baking soda
  • ½ tsp table salt
  • ½ cup natural cocoa powder
  • ½ cup steaming hot or boiling water
  • 10 tbsp melted butter
  • 1 cup sour cream
  • 2 large eggs, lightly beaten
  • 2 tsp vanilla extract
  • 1½ cups shredded zucchini, patted dry with a paper towel

Frosting

  • 1 (8-ounce) block cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2½ cups powdered sugar
  • ⅓ cups cocoa powder
  • ¾ tsp vanilla extract
  • ⅛ tsp table salt
  • 2 tbsp mini chocolate chips, for topping, optional

Directions:

Cake

  • Preheat your oven to 350°F, then lightly grease a 9×13-inch baking dish with butter, and set it aside. In a large mixing bowl, add the flour, sugars, baking soda, and salt, then whisk them until combined and uniform, and set aside. In a separate heat-proof mixing bowl, add the cocoa powder, then pour in hot water, and whisk the cocoa until smooth and combined.
  • Add the butter, then continue to whisk until incorporated, add the source cream, egg, and vanilla extract, and keep whisking until combined. Add the flour mixture to the chocolate mixture, then fold everything together until almost combined, add the zucchini, and continue to stir until evenly combined.
  • Pour the batter into the prepared pan, then spread it evenly, and place it in the center rack of the preheated oven. Allow it to bake for about 33 to 35 minutes or until a toothpick inserted at the center comes out clean, then let it cool down, and while waiting, prepare the frosting.

Frosting

  • In a large mixing bowl, add the cream cheese and butter, then stir them until smooth and creamy, and then gradually add the powdered sugar while stirring consistently until combined. Add the cocoa powder, then give them a good stir, add the vanilla extract and salt, and keep stirring until smooth and well combined. Spread the frosting over the cooled cake evenly, then sprinkle some mini chocolate chips all over the top, slice, and serve. Enjoy!
