Ingredients:

For the dough:

  • 3 eggs
  • 1 & 1/4 cups of flour
  • 10 & 1/4 tbsp powdered sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • a pinch of salt
  • 1/3 cup melted butter

Yogurt foamy topping:

  • 1 & 3/4 cups Greek yogurt
  •  1/4 cup cornstarch
  • 1 tsp vanilla
  • a pinch of salt
  • 2/3 cup sugar

For the filling:

  • 3 apples (with skin)
  • 1/4 cup sugar
  • 2 tsp cornstarch
  • 1/2 lemon juice

Directions:

Step 1

Separate 3 egg yolks and whites. In the egg yolks bowl, add a pinch of salt and 10 & 1/4 tbsp powdered sugar. Whisk it until well combined. After this, add 1/3 cup melted butter followed by 1 tsp of vanilla, and continue to whisk. Put a strainer on top of the bowl, then add 1 & 1/4 cups of flour and 1 tsp baking powder. Sift this, then mix the mixture until dough forms. Knead the dough a little then place it on a chopping board. Cut 1/3 of the dough, wrap it with plastic, and put it in the freezer to be used later. Now, line your mold with parchment paper on the bottom, place the remaining dough, and work it covering the entire bottom and walls of the mold. Place this in the freezer. Next, wash your apples thoroughly with the skin on, slice them, then cut them into cubes. Put them in a bowl, then add 1/4 cup sugar followed by 2 tsp cornstarch, and 1/2 juice of 1 lemon. Mix it, then cook in a pan over low heat for 10 minutes. Set it aside.

Step 2

Next, in a bowl, add 1 & 3/4 cups Greek yogurt followed by  1/4 cup cornstarch, and 1 tsp vanilla. Whisk to combine well, then set it aside. After this, in a separate bowl, add the 3 egg whites and a pinch of salt. Beat them using a handheld mixer for at least 7 minutes. Add 2/3 cup of sugar in batches while beating the mixture. Now, add the beaten egg whites to the yogurt mixture in batches, folding them in between. Next, add the apple mixture to the bottom of the mold, spreading them evenly. After this, add the yogurt mixture on top, spreading it also nicely. Get the frozen dough and grate it on top. Place it in the oven at 350 degrees F and bake for 40 minutes. After 40 minutes, get it out of the oven and sprinkle some powdered sugar on top.
