I tried this a few days ago and my family thought it was so tasty that they managed to finish a whole serving within just a few minutes, and they even asked me to make it more often. Learn how to prepare this now with only a few simple steps and have it ready in as fast as 30 minutes.

Ingredients:

  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 1 pound of ground beef or ground pork
  • 4 boxes of Jiffy Cornbread, plus the ingredients listed on the box
  • 1 packet of taco seasoning mix
  • ½ can of black beans, drained, rinsed
  • ½ can of corn, drained
  • 1 can of rotel, undrained, or use diced tomatoes
  • A couple of cups of fresh spinach
  • 2 cups of cheese for cornbread, plus more for topping
  • Olive oil

Directions:

Step 1

Place a pan on a stove over medium-high heat, then drizzle some oil, and allow it to heat up before adding the onions and bell peppers. Give them a good toss and cook them until softened, then while waiting prepare the cornbread mix in a large mixing bowl according to the package instructions, and mix in the cheese until incorporated.

Step 2

Check the onions and bell peppers if they’re ready, then stir them around, and add the ground pork. Break them apart, then cook until nice and brown, add the taco seasoning, and continue to mix until combined. Reduce the heat to low, then add the diced tomatoes, and give them a quick mix before adding the corn and black beans.

Step 3

Toss them together, then add the baby spinach, continue to mix, and allow them to cook until the leaves are wilted. Turn off the heat and remove from the stove, then generously grease a 9×13 inches baking dish with nonstick spray or use a cast-iron skillet pan (preheat the skillet in the oven first before using), and pour half of the cornbread mixture spreading it at the bottom evenly.

Step 4

Add the meat mixture all over the top spreading it nicely until the cornbread is covered, then add the remaining half of the cornbread mixture on top, and spread it evenly. Place it in a preheated oven at 400°F, then allow it to bake for about 15 to 20 minutes or more if you want a more browned top, make sure to keep an eye on it so it doesn’t get burned. Serve and enjoy!
