Step 1
Preheat your oven to 350°F, then line two 8-inch round cake pans with parchment paper, and grease the bottom and sides. In a large mixing bowl, sift over the flour, baking powder, baking soda, and salt, then stir them until uniform, and set them aside.
Step 2
In another large mixing bowl, add the butter and sugar, then beat them until creamy, and then add the eggs one at a time making sure to beat well in between each addition.
Step 3
Add the oil and vanilla extract, then keep beating until incorporated, and then add the flour mixture and buttermilk in 2 batches alternately. Make sure to beat continuously until fully incorporated, then divide the batter evenly in the prepared cake pans, and place them in the preheated oven.
Step 4
Allow them to bake for about 40 minutes or until a toothpick inserted at the center comes out clean, then let them cool for around 5 to 10 minutes, and then release them from the pan transferring them to a wire rack to cool completely.
Step 5
Meanwhile, prepare the frosting in a large mixing bowl, beat together the cream cheese and butter until smooth, then add the powdered sugar and vanilla extract, and keep beating until creamy.
Step 6
In a separate bowl, add the heavy cream and beat it until stiff peaks form, then transfer it to the cream cheese mixture, and fold them until incorporated. Place one cake layer with its flat side facing down, then spread some frosting over it, and place the other cake layer on top with its flat side facing up.
Step 7
Cover the entire cake with the remaining frosting, then decorate at the top and bottom of the cake with sprinkles as demonstrated in the video, and then place the cake in the refrigerator to chill for at least 2 hours. Serve and enjoy!
