Cinnamon rolls are one of my go-to pastries whenever I go to a cafe or simply when I want to bake something at home, that is until I discovered this coffee-flavored version by Food Wishes on YouTube.

These sweet and decadent rolls are so good and addicting that I can probably eat them every day. They are super easy to make, too, and I serve them whenever I have friends coming over. You should try making this today!

Step 1
In the bowl of a stand mixer, add the instant coffee powder and hot milk, then beat them until combined, and allow the mixture to cool down to 95°F. Add the yeast, egg, white sugar, salt, and melted butter along with most of the flour, then beat them over low speed until dough forms, and speed up the mixer to knead the dough for about 3 to 4 more minutes until smooth and elastic.
Step 2
Remove the dough from the mixer, then shape it into a ball, and put it in a bowl before covering it with plastic wrap. Place it in a warm place and allow it to rest for about 1 to 2 hours or until it doubles in size. For the filling, place a small pan on a stove over medium heat, then add the butter, and allow it to melt before adding the brown sugar, cocoa, and instant coffee powder.

Step 3
Stir everything consistently until combined, turn off the heat, and remove it from the stove to allow it to cool. Once the dough is ready, degas it, then reshape it into a ball, and transfer it to a Ziploc bag. Put it in the fridge and set it aside along with the filling until ready to use. Transfer the dough to a lightly floured work surface, then flatten it into a rectangle, and lightly dust the top with flour.

Roll it out into a 12×18-inch rectangle, then spread the filling evenly on top making sure to leave a few inches on one long side, and lightly brush it with water. Start rolling the over as shown in the video, then cut the log into 12 equal rolls, and place them in a 9×12-inch baking dish generously greased with butter. Cover the rolls, then let them rise in a warm area for about 1 to 2 hours or until doubled in size.
Step 5
Preheat your oven to 375°F when almost ready, then place the rolls in the preheated oven, and let them bake for about 30 minutes or until puffed, the edges are golden brown, and it reaches a temperature of 200°F. Allow them to cool for at least 15 minutes, then whisk together the ingredients for the icing, and drizzle them over the top of the cooled rolls. Serve immediately and enjoy!
