One of my favorite versions is this recipe by Food Wishes on YouTube which is infused with evaporated milk, and if you haven’t tried it before, then trust me, this will be your new favorite and possibly the only way you’d ever want mashed potatoes served! It’s just as easy to prepare as the usual but more delicious. Learn how now to see for yourself.
Step 1
Peel off the skin of the potatoes, then cut them into quarters, and transfer them to a large pot. Pour in some water until about 2 inches above the potatoes, then add the salt, and bring to a boil over high heat. Once boiling, reduce the heat to a simmer, then let the potatoes continue to cook for about 30 to 40 minutes or until fork tender.
Step 2
When the potatoes are almost done cooking, place a saucepan on a stove over low heat, then add the evaporated milk, milk, and buttermilk, and let them simmer. Check the potatoes and drain off all the water, then mash them until smooth, add the butter, and keep mashing until incorporated.
Step 3
Season it with a teaspoon of salt, white pepper, and cayenne, then pour in the hot milk mixture, and beat them with a handheld electric mixer over high speed until light and fluffy. Adjust the seasoning to taste, then garnish with melted butter and chives, and serve immediately. Enjoy!
