Ingredients:

  • 12 slices of bacon, thick-cut
  • 3-4 medium potatoes, peeled
  • 1 cup of heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 9 slices of cheddar cheese, mature

Directions:

Step 1

Preheat your oven to 350°F, then grease a stainless or oven-safe bowl with butter, and set it aside. Lay the 10 slices of bacon on top of a sheet of parchment paper, then arrange it in a lattice pattern, and lay another sheet of parchment paper on top of the bacon. Flatten it with a rolling pin until the bacon slices are about ¼ inch thick, then remove the parchment paper on top. Transfer the bacon into the prepared buttered bowl, then press it into the bottom nicely making sure to have some overhang, lay slices of cheese on top of the bacon to cover, and set it aside. Next, slice the potatoes into 3-4mm or almost 1/8 inch thin, the thinner the better, then place them in a large mixing bowl, add the heavy cream, and season with salt and pepper. Toss it lightly until covered.

Step 2

Place a layer of potato on top of the cheese slices making sure they are nice and compact. After building a few layers of potato, place a slice of cheese on top, then repeat the layering process until all ingredients are used up making a dome at the top to allow for the potatoes to shrink down as they cook. Now, fold the bacon that was overhanging over the top of the potato to form a base, then place a piece of parchment paper and a 6-inch cake pan on top of the bacon dome, and pour baking beans into the cake pan to keep the bacon flat and very compacted as it cooks. Put in the preheated oven and let it bake for about 1 hour and 30 minutes. Once done baking, remove it from the oven, then place a rack over the baking tray, and place the potato dome back in the oven for 10 to 15 more minutes to crisp up. Slice, serve immediately, and enjoy!
