Every year on Easter, our relatives would gather for a celebration including all the children in the family. I was always in charge of the treats and for this year, I decided to make these super adorable cupcakes that are too cute to be eaten. The kids would surely be excited upon seeing the cupcakes and become even happier upon tasting the delicious vanilla flavored treat! Step 1
Start off by preparing the fondant bunny. Roll some fondant out to a thin sheet, then using the back of a piping tip, cut circles for the feet. Roll the circles out a bit to form ovals. Mix the pink food coloring with a small amount of fondant. Roll out and use 2 small round piping tips to create the pads for the feet. Press some fondant into a rounded glass or small bowl to form the body. Form a small fondant ball and insert a stick at the bottom, wet it around with water then coat in sugar. Assemble the bunnies and set them aside. In a large mixing bowl, sift the all-purpose flour, baking powder, baking soda, salt, and sugar, then give them a good whisk, and set aside. In a smaller mixing bowl, whisk the sour cream, milk vanilla extract, and unsalted butter together.

Step 2
Add in the egg whites and zest of a lemon, whisk them again until well combined, then pour them into the dry mixture. Whisk them together until combined, then scoop them out using an ice cream scoop, and transfer onto a cupcake mold lined with cupcake papers. Bake them in a preheated oven at 340°F for about 20 minutes turning it around halfway. In a stand mixer, beat the unsalted butter and salt for a few seconds before adding the confectioner’s sugar, then mix on low to medium speed. Add in the vanilla extract and salt, beat them together then add a few drops of green food coloring. Use a spatula to add a layer of grass to the cupcakes. Transfer the rest of the buttercream to a piping bag, then pipe grass around the edge of the cupcake and place the bunny at the center.
