Ingredients:
- 3 tablespoons of extra virgin olive oil
- 1 medium onion (diced)
- 2 celery stalks (sliced)
- 2 large carrots (sliced)
- salt and pepper to taste
- 4 Yukon potatoes (diced)
- 1 teaspoon of dried thyme
- 2 garlic cloves (minced)
- 3 cups of low-sodium vegetable broth
- 2 cups of peas (frozen)
- 2 cups of corn (frozen)
- 2 cups of plant-based milk
- chopped fresh parsley for serving

Instructions:
Step 1:
Place a pot over medium heat and drizzle some olive oil. Add the diced onions, carrots, and celery, then season with salt and pepper. Cook until the vegetables are soft for about 5 minutes while stirring occasionally. Add the chopped potatoes, thyme, and garlic. Cook until fragrant for about 1 minute.
Step 2:
Pour the vegetable broth, mix, and bring it to a boil. Once boiling, bring down to a simmer until the vegetables are soft for about 20 minutes.
Step 3:
Using an immersion blender, lightly blend the soup, so it will become a bit thicker. If you prefer to have big chunks of vegetables, you can remove some of the vegetables aside and just put them back in.
Step 4:
Add the peas, corn, and milk to the soup. Let it simmer until the vegetables are warmed through and the soup has a thick consistency for about 5 minutes.
