If you don’t know what to serve for snacks yet, then try making this cowboy caviar that consists of beans drizzled in a delicious homemade dressing. This dish can be served with tortilla chips and tastes incredible that you would want to eat everything in just one sitting.

Ingredients for Ultimate Cowboy Caviar:

Dressing

  • 1/3 cup of avocado oil or vegetable oil
  • 1/3 cup of seasoned rice vinegar
  • lime, juiced
  • 3 cloves of garlic, minced
  • ¼ tsp of garlic powder
  • 1½ tsp of kosher salt, plus more to taste
  • 1 tsp of white sugar
  • 1¼ tsp of ground cumin
  • 1 tsp of smoked paprika
  • ½ tsp of chipotle pepper, or to taste

Caviar

  • 2/3 cup of finely diced red onion
  • 1½ cups of diced bell peppers
  • 1/3 cup of diced jarred roasted red peppers
  • 1/3 cup of diced pickled jalapeno peppers, or other pickled peppers
  • 1 (15oz) can of black beans, drained and rinsed
  • 1 (15oz) can of black-eyed peas, drained and rinsed
  • 2 cups of frozen corn
  • 1 cup of diced fresh tomato
  • ½ cup of freshly chopped cilantro
  • Scoop-style tortilla chips, for serving

Step 1

In a large bowl, add the avocado oil, rice vinegar, lime juice, minced garlic, garlic powder, salt, sugar, cumin, paprika, and chipotle, then whisk everything until well combined, and set it aside for later until needed.

Step 2

Give the red diced onion a good rinse under cold water, then drain off all the water, and set it aside. Add the bell peppers, roasted red peppers, jalapenos, black beans, black-eyed peas, corn, and tomato to the bowl of dressing, then add in the drained red onion, and continue to stir well to combine.

Step 3

Cover the bowl with plastic wrap or a lid, then place it in the refrigerator, and let it chill for about 2 to 12 hours making sure to toss it occasionally. Once ready to serve, add in the cilantro, then season them with salt to taste, and give them a good stir. Serve with tortilla chips and enjoy!
