Ingredients:

  • 1 medium-large (about 12 oz, 340g) crown of broccoli
  • 3-4 garlic cloves
  • 1 small ginger
  • ½ small fresh chili
  • 1 cup water or stock
  • ½ teaspoon onion powder
  • ¼ cup soy sauce
  • 1-2 tablespoons sugar
  • 2 teaspoons mustard
  • 2-3 tablespoons oyster sauce
  • 1-2 teaspoons toasted sesame oil
  • 2-3 tablespoons cornstarch
  • Pepper, to taste
  • Salt or MSG, to taste
  • Cooking oil
  • Sesame seeds, for garnish (optional)
  • 1 cup white rice

Directions:

Step 1

Before you start preparing the broccoli, wash and cook the rice first. Next, place a steamer basket inside a big pot, then pour enough water to come up to the basket, cover it with the lid, and bring it to a boil over high heat. Cut the broccoli into bite-sized florets, then once the steamer is boiling, throw in the broccoli, cover, and steam for about 3 minutes. Get a bowl of water, add some ice, then pull out the steamed broccoli, and dump it into the ice water. Stir it around until all of the pieces have cooled down. Add a thin film of oil into the pan, just enough to cover the bottom, then saute the garlic, ginger, and chili, and stir-fry them for a few minutes or until soft.

Pour a cup of broccoli water or stock, then add the soy sauce, sugar, mustard, Marmite, sesame oil, onion powder, and pepper. Give them a good stir and bring to a simmer while making the slurry. Simply combine the cornstarch and water, then stir until thick consistency. Taste the flavor of the sauce, then add some accent flavor enhancer if you want. You should also lower your heat setting at this point to avoid burning the sauce. Pull the water out of the ice water, drain it completely, then put it in the sauce mixture. Stir them all together until well combined, then adjust the sauce to desired consistency. Serve together with rice and garnish with some sesame seeds.
