Ingredients:

  • 1½ pounds broccoli
  • ½ cup chopped broccoli stalk
  • 1½ cups diced carrots
  • 1½ cups diced onions
  • 5½ tbsp all-purpose flour
  • 3 tbsp butter
  • 2 tbsp bacon grease
  • 3 medium finely minced garlic cloves
  • 1 finely chopped celery rib
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 4 cups Chicken stock
  • 2 cups Half & Half
  • Salt, to taste
  • Pepper, to taste
  • ¼ tsp nutmeg
  • ½ tsp red pepper flakes, optional
  • ½ tsp yellow mustard
  • 12 ounces sharp cheddar cheese
  • Toasted bread slices

Directions:

Step 1

Wash and clean the broccoli well, then start chopping it into florets, and then into smaller bite-sized pieces. Place a Dutch oven on a stove over low or medium-low heat, then melt the butter and baking grease, and add the onions stirring and cooking them for a few minutes until translucent. Add the carrots and celery, then let them cook for about 2 to 3 minutes until all the flavors have been released, and add the garlic followed by the chopped broccoli. Give them a good toss and cook for about 2 minutes, then season them with onion powder, garlic powder, nutmeg, and freshly ground black pepper, and then toss them together to combine.

Step 2

Slowly pour the chicken stock while scraping the pot to deglaze the bottom, then stir them nicely before adding the half and half, yellow mustard, and pepper flakes, and stir them together. With the pot uncovered, bring the mixture to a simmer for about 10 minutes or until slightly bubbling everywhere, then prepare the bread while waiting, and toast it in the oven at 425° for about 6 to 7 minutes flipping it over at the 3-minute point until nice and golden. Once cooked, slowly top with the cheese and stir to melt, then serve with the toasted bread on the side, and enjoy!
