Step 1

Prick the bottom of the pie crust all over with a fork, then in a preheated oven at 425°F for about 10 minutes or until the edges are slightly browned, and set it aside to cool completely.

Step 2

In a large bowl, add the sugar, cornstarch, salt, egg yolks, and ½ cup of milk, then whisk everything until fully incorporated, and set it aside. Place a saucepan on a stove over medium heat, then pour in the remaining 2 cups of milk, and heat it just to a boil while stirring consistently.

Step 3

Once it reaches a boil, slowly pour the hot milk into the egg mixture while whisking quickly, then transfer the mixture back into the saucepan, and continue to heat over medium heat until thick and bubbly.

Step 4

Turn off the heat, then remove the saucepan, and throw in the butter followed by the vanilla extract. Whisk them until the butter has melted and is well combined, then place it back on the stovetop, and let it cool for at least 45 minutes to 1 hour.

Step 5

Once the pudding is almost ready, prepare the crust, place the banana slices on the bottom of the baked crust, arrange them in a single layer, and then pour in the pudding all over them.

Step 6

Spread the pudding as evenly as you can, then cover it with plastic wrap or put it in the refrigerator uncovered, and let the pie chill for about 4 to 6 hours or until set. Decorate the pie with whipped cream and sliced almonds however you want, then serve, and enjoy!
