Step 1
Place the eggs in a saucepan, then cover them with water, and bring them to a boil for about 10 minutes. After boiling, turn off the heat and pour out all the water on the saucepan, then transfer the eggs to a bowl of cold or ice water, and allow them to cool completely.
Step 2
Cut the avocado open in half, then remove the pit at the center, and cut the avocado into small cubes or chunks. Transfer the avocado pieces to a large bowl, then add the cherry tomatoes or chopped large tomato, and add in the chopped celery, red onion, and chives as well.
Step 3
Squeeze the lemon juice over them and give them a good mix, then peel off the shell of the eggs, and chop them into pieces. Add the eggs to the bowl, then add the mayonnaise, salt, and pepper, and stir them well to combine. Serve immediately and enjoy!
