  • 200g (1 cup) Mascarpone
  • 20g (1½ tbsp) Granulated sugar
  • 2 Egg yolks
  • 1 Egg white
  • 30g (2½ tbsp) Granulated sugar
  • 100ml (3.3 ounces) Fresh cream

Directions:

Step 1

In a mixing bowl, beat 3 egg whites until frothy, then add in the sugar gradually, and beat until stiff peaks form. Change to a spatula, then fold the mixture and add 2 yolks, beat well before switching to a spatula to fold and mix. Sift in the flour and cocoa powder, then fold and mix until well combined. In a separate bowl, combine the milk and vegetable oil, then add a bit of the mixture, and stir until uniform. Then, pour it all back into the dough mixture, fold in and mix well. Pour the batter on a 15 cm (6 inches) square cake pan and spread evenly, tap on the surface to release trapped air bubbles. Bake it in an oven preheated to 170°C (338°F) for 30 minutes. Once done baking, tap on the surface and remove from the pan, then transfer it to a cooling rack.

Then, place the 12cm cake on top, brush the surface with coffee, then add the remaining tiramisu cream mixture. Let it cool in the refrigerator and allow it to set completely.
