Step 1
In a mixing bowl, beat 3 egg whites until frothy, then add in the sugar gradually, and beat until stiff peaks form. Change to a spatula, then fold the mixture and add 2 yolks, beat well before switching to a spatula to fold and mix. Sift in the flour and cocoa powder, then fold and mix until well combined. In a separate bowl, combine the milk and vegetable oil, then add a bit of the mixture, and stir until uniform. Then, pour it all back into the dough mixture, fold in and mix well. Pour the batter on a 15 cm (6 inches) square cake pan and spread evenly, tap on the surface to release trapped air bubbles. Bake it in an oven preheated to 170°C (338°F) for 30 minutes. Once done baking, tap on the surface and remove from the pan, then transfer it to a cooling rack.

Step 2
In a bowl, combine the mascarpone cheese and sugar by folding them together and mixing until smooth. Add in 2 yolks and whisk until uniform. In a separate bowl, beat 1 egg white in lightly, add in sugar gradually and beat until soft peaks, transfer it to the mixture, then whisk until incorporated. In another bowl, beat the heavy cream, then fold and mix, before adding it to the mixture, mix until uniform.
Step 3
Slice the sponge cake in half, then trim one into a 15cm (6 inches) circle, and the other into a 12cm (4-5 inches) circle. Place the 15cm cake at the bottom of a 15cm round pan, then brush the surface with coffee, and pour some of the tiramisu cream mixtures. Then, place the 12cm cake on top, brush the surface with coffee, then add the remaining tiramisu cream mixture. Let it cool in the refrigerator and allow it to set completely. To unmold, wrap around a warm wet towel, then gently slid the cake from the round pan, dust the top with cocoa powder, and garnish with whatever you want.
