Cookies are one of the best pastries ever invented and there are a lot of variations that you can taste and try. Among all of the recipes that I’ve tried, this is one of the simplest yet also my favorite one, it’s just so good and tasty! Plus, you can make these cookies using any of your favorite flavors of jam or use melted chocolate instead.

Step 1
Preheat your oven to 170°C or 340°F, then line two baking sheets with parchment paper, and set them aside. In a large mixing bowl, add the butter and powdered sugar, then beat them together until smooth and creamy, and add the egg yolk and vanilla extract.
Step 2
Keep mixing until incorporated, then add the flour and salt, and continue to stir until incorporated and a dough is formed. Scoop out a tablespoon full of dough, then roll it into a ball, and put it on the prepared baking sheets.

Step 3
Continue to roll the remaining dough into balls, then place them on the same baking sheet, and make sure to space them evenly. Slightly flatten each ball, then press the center with your thumb to make an indentation, and fill each dough with jam.
Step 4
Place them in the preheated oven, then allow them to bake for about 12 to 15 minutes, and dust them with powdered sugar. Let them cool down on a wire rack, then serve, and enjoy!
