Ingredients for Texas Nachos:

  • 24 thick tortilla chips
  • 2 cups of Colby Jack cheese, grated
  • ¾ cup of refried pinto beans
  • 1 pound of ground beef
  • 1 oz of taco seasoning
  • 2/3 cup of sour cream
  •  3 Roma tomatoes, chopped
  • ¼ cup of red onion, sliced thinly
  • ¼ cup of cilantro, chopped
  • 3 tbsp of pickled jalapeno slices
  • Salsa, store-bought or homemade

How to Make Texas Nachos:

Step 1

Preheat your oven to 350°F, then line two baking sheets with parchment paper, and set them aside. Place a pan on a stove over medium-high heat, then add the ground beef, and break it apart. Add the taco seasoning followed by a splash of water, then give them a good mix, and cook the meat until nice and brown.

Step 2

Turn off the heat, then drain off the excess grease if desired, and set the meat aside. In the food processor, add the tomato, red onion, cilantro, pickles jalapeno brine, salt, and pepper, then process them until finely chopped, and set the mixture aside.

Step 3

Place the tortilla on the prepared baking sheet, then spread some refried beans on each chip, and top them with beef and cheese. Place them in the oven, then let them bake for a few minutes just until the cheese has melted and is golden. Remove them from the oven, then plate them with toppings and salsa on the side, and enjoy!
