Whenever I need a quick and easy recipe to make at the last minute, I always opt for something that I can make in half an hour and requires a few simple ingredients.

One of my all-time favorites is this recipe by Ashley . The Recipe Rebel on YouTube, and what’s even better is that you can make this using leftover ingredients that you may have in your fridge.

Ingredients for Taco Casserole:

  • 1 pound of lean ground beef
  • 1 red bell pepper, chopped
  • ½ medium onion, finely chopped
  • 3 tsp of taco seasoning
  • 1 tsp of dried oregano
  • ½ tsp of salt, optional
  • 2 cups of jarred tomato salsa
  • 1 can of black beans, drained and rinsed well
  • 6 large tortillas
  • 3 cups of shredded cheddar cheese

Step 1

Preheat your oven to 350°F. Place a large skillet on a stove over medium-high heat, then add the ground beef, bell pepper, and onion, and then break the beef apart.

Step 2

Give them a good toss and cook them until the beef is browned and the veggies are softened. Add the taco seasoning, oregano, and salt, then give them a good mix, and cook them for about 1 minute.

Step 3

Add the salsa and beans, then mix to combine, turn off the heat, and remove the pan from the stove. Place two large tortillas at the bottom of a 9×13-inch baking dish, then add 1/3 of the meat mixture spreading it evenly, and sprinkle 1/3 of the cheese all over the top.

Step 4

Repeat the layers two more times with the remaining tortillas, meat mixture, and cheese, then place them in the preheated oven, and allow them to bake at 350°F for about 15 to 20 minutes or until heated through and the cheese has melted. Serve and enjoy!
