Ingredients for Sweet Potato Pudding:

  • 6 large sweet potatoes
  • 2 sticks of butter, melted
  • ½ tsp of salt
  • 1 cup of brown sugar
  • 1 cup of white sugar
  • ¾ cup of flour
  • 2 tsp of cinnamon
  • ¾ tsp of nutmeg
  • 3 tbsp of rum, optional
  • 1 tbsp of vanilla extract
  • 1 tsp of lemon juice
  • 2 eggs, beaten
  • 1 cup of evaporated milk

How to Make Sweet Potato Pudding:

Step 1

Roast the sweet potatoes, then let them cool completely, and peel off the skin. Preheat your oven to 350°F, then place the peeled sweet potatoes in a large bowl, and beat them until mashed. Transfer them to a food processor, then process them until smooth, and then put them back in the bowl.

Step 2

Add the vanilla extract, cinnamon, nutmeg, rum, melted butter, salt, sugars, and evaporated milk, you can also add some freshly grated ginger. Mix them until thoroughly combined, then adjust the spices and sugar to taste, and add the flour and lemon juice.

Step 3

Continue to mix until well combined, then add the beaten eggs, and keep mixing until incorporated. Grease 2 baking dishes with butter, then divide the batter evenly and place them in the preheated oven. Allow them to bake for about 50 minutes or until browned fully set, then let it cool, and serve. Enjoy!
