Ingredients for Strawberry Tiramisu:

  • 28 ladyfingers

Strawberry Sauce

  • 400g or 14oz of fresh strawberries, hulled and cut into smaller pieces
  • 1/3 cup of sugar
  • 2 tbsp of lemon juice
  • ¼ cup of water

Mascarpone Filling

  • 1 pound of mascarpone cheese, at room temperature
  • 2/3 cup of powdered sugar
  • 2 tsp of vanilla extract
  • 1½ cups of whipping cream, 35% fat, chilled

Decoration

  • Fresh strawberries

How to Make Strawberry Tiramisu:

Step 1

Line the sides of an 8-inch square springform pan with acetate sheets and set it aside. Place a saucepan on a stove over medium to medium-high heat, then add the strawberries, sugar, lemon juice, and water, and bring it to a boil.

Step 2

Once boiling, reduce the heat to medium-low or low, then let it simmer for about 5 to 7 minutes, and use a stick blender to process the strawberry sauce until smooth. Turn off the heat, then sieve the sauce over a bowl to remove the seeds, then set it aside, and let it cool completely.

Step 3

In a separate bowl, beat the Mascarpone cheese until creamy, then add the powdered sugar and vanilla extract, and continue to beat until combined. Add the whipping cream, then keep mixing until stiff peaks form, and start assembling the tiramisu.

Step 4

Spread 1/3 of the sauce on the bottom of the prepared pan, then dip the ladyfingers in the remaining strawberry sauce until fully coated and arrange them in the bottom of the pan in a single layer.

Step 5

Spread about half of the mascarpone filling over the ladyfingers evenly, then repeat another layer of ladyfingers over the filling, and transfer the remaining mascarpone filling to a piping bag.

Step 6

Pipe and decorate the final layer of ladyfingers, then cover the tiramisu and put it in the refrigerator. Allow it to chill for at least 4 hours up to overnight, then decorate it with fresh strawberries, and serve. Enjoy!
