It’s strawberry season, which means it’s time for strawberry-flavored dessert recipes! This easy strawberry pie recipe by Preppy Kitchen is one of the most delicious pies I have ever made at home. Just looking at the photo makes me hungry. The sweetness is balanced by the acidity of the lemon juice, making it the perfect treat for the spring and summer seasons.

For the pie crust, you can use either a store-bought or a homemade one. You need to blind-bake it, which means you need to bake the pie without the filling first.
For the filling, you will only need 5 ingredients: strawberries, sugar, cornstarch, lemon juice, and water. It’s very easy to make and delicious. Once it is ready, it is poured into the cooled crust. After that, all you need to do is wait until it’s chilled and set. Serve it with whipped cream for a yummy treat.

Bake the store bought pie crust according to the package instructions. Once done, let it cool completely.
Slice the strawberries in half. Set aside half of the strawberries in a large bowl for later.
In a medium saucepan, add the remaining strawberries, sugar, 1/4 cup of water, and lemon juice. Stir well to combine. Mash the strawberries into chunks, then place the pot over medium heat. Let it come to a boil, while stirring occasionally.
Once boiling, lower the heat to medium-low. In a small bowl, mix the cornstarch and 1/4 cup of water, then stir it into the pot. Let it simmer while stirring frequently for about 5 minutes. Remove from heat and set aside. Let it cool for about 10 minutes.
Pour the filling over the reserved strawberries. gently stir to coat. Pour the mixture into the cooled baked crust. Spread the strawberries evenly. Smoothen the top with a spatula.
Place in the fridge, uncovered, for at least 3 hours or until set.
Once set, slice, and add whipped cream on top. Serve and enjoy!
