Step 1
Season the chuck roast strips with salt and pepper, then place a large skillet on a stove over medium-high heat and heat the olive oil and butter until melted. Add the seasoned beef, then sear it until nice and brown, and set it aside on a plate. In the same skillet, add the onion, then saute it for about 3 to 4 minutes, add the garlic, and continue to cook for 1 more minute.

Next, add the sliced mushrooms and give them a good toss, then cook them for about 5 to 7 minutes or until golden brown, sprinkle the flour, and stir them until well incorporated. Let them cook for about 1 to 2 minutes, then pour in the beef broth, and stir them continuously to avoid lumps. Bring it to a simmer, then cook for 5 minutes until thickened, and then put the cooked beef back into the skillet.
Step 3
Now, add the Dijon mustard and Worcestershire sauce, stir them, and turn the heat low. Cover the skillet and let the mixture simmer for 45 minutes to 1 hour or until the beef is tender, then once almost done cooking, prepare the noodle according to the package instructions. Stir in the sour cream, then adjust the seasoning to taste, and turn off the heat. Serve over the egg noodles, then garnish with parsley, and enjoy!
