Note: if you want a sweet cornbread, add a few tablespoons of sugar
Place an 8-inch non-stick skillet on low heat.
While waiting for the skillet to heat, make the cornbread mixture. In a mixing bowl, add one egg and beat well. Next, add 1 teaspoon of cooking oil, 2 1/2 tablespoons of milk, 1 heaping 1/4 cup of cornmeal, 1/4 cup of flour, 1 teaspoon of baking powder, salt, and black pepper. Mix until well combined.
To check if your pan is hot enough, add a drop of water. If it sizzles, your pan is ready. Add 1 teaspoon of butter and swirl it around until melted.
Pour the batter and spread over the pan. Place the lid and set the timer for 10 minutes.
After 10 minutes, flip with a spatula and cook for 3 more minutes on the other side. If you want it to be extra crispy, take the lid off. Turn the heat off and let it sit for a few more minutes.
Transfer to a plate. Spread butter on top. Slice and serve. Enjoy!
