I’m not a big fan of carrots and would usually pick them out of my dish, but when they are cooked right, I can eat a couple of them without hesitation. One of the best recipes I’ve tried is this one by Kevin Is Cooking on YouTube, is just makes the carrots taste so good and addicting that I couldn’t stop eating it. This is not only perfect for a regular family mealtime but also for parties, gatherings, and/ or special occasions, too.

Ingredients:

  • 1.5 pounds of carrots
  • 12 slices of thin-cut bacon
  • 1 tbsp of black pepper
  • 1/3 cup of maple syrup
  • 1 tbsp of sriracha sauce, optional
  • Parsley, for garnish

Directions:

Step 1

Preheat your oven to 400°F, then line a rimmed baking sheet or long casserole dish with parchment paper or Silpat, and set it aside. In a small mixing bowl, add the maple syrup and sriracha sauce, and whisk them together until well combined before setting it aside.

Step 2

Peel off the skin of the carrots, then trim off the stem leaving only about an inch tall, and make sure they are washed and cleaned. Starting on one end, wrap the bacon slice around the carrot diagonally until you reach the other end, and place it onto the prepared baking sheet.

Step 3

Repeat the same process for the rest of the bacon slices and carrots, then sprinkle them with black pepper and place them in the preheated oven. Allow them to rest for about 25 minutes, then turn them over, baste them with the sauce, and put them back in the oven.

Step 4

Let them roast for an additional 20 to 25 minutes depending on the thickness of the carrots. Once the bacon is crispy, remove them from the oven, baste them with the remaining sauce, and garnish them with chopped parsley. Serve immediately and enjoy!
