Start by preheating your oven to 350F and greasing two 9-inch baking pans with baking spray.
In a large mixing bowl, add flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Whisk until well combined.
Get a medium mixing bowl and add brown sugar, oil, applesauce, buttermilk, eggs, and vanilla. Whisk until well combined.
Combine the sugar mixture with the flour mixture. Whisk until just combined. Divide the batter into the greased pans.
Place inside the preheated oven and bake for 30 minutes or until the center springs back when gently pressed. Once done baking, let it cool for 10 minutes in the pans. After that, invert them on a wire cooling rack to cool completely.
Make the cream cheese frosting. In a large bowl or the bowl of your stand mixer with the whisk attachment, add butter and cream cheese. Whisk on medium speed until smooth and fluffy for about 2 minutes. Turn the speed to low, then gradually add in the powdered sugar. Make sure to scrape down the sides of the bowl. Once combined, add the vanilla and beat on medium-low speed until it becomes fluffy for about 1 minute.
Place a cake on your plate or cake stand, then spread one cup of the homemade frosting. Place another cake on top, then spread the remaining frosting all over the cake. Decorate however you like. Refrigerate for at least 30 minutes before slicing the cake.
