I am someone who is always hungry and you’ll often see me raiding the fridge or the pantry for any leftovers that I can work with and turn into a delicious dish. So when I watched this video tutorial by pibbitpencil on TikTok, I was immediately excited because we happened to have some leftover mashed potatoes on the fridge along with lots of shredded cheese and bacon. I gave it a try and upon tasting the patties, I knew that I would make this recipe again a couple more times in the future!   • Cold leftover mashed potatoes
  • egg, or more as needed
  • Flour, as needed
  • Chopped bacon, onions, and/or ham
  • Shredded cheese
  • Oil, for frying

Beat an egg and add it to the mashed potatoes, then give them a good mix, add a couple tablespoons of flour, and continue to mix them until combined. Add in the chopped bacon, onions, and/or ham along with lots of cheese, then mix them all together until combined, and shape them into patties. Place a skillet or a nonstick pan on a stove over medium heat, then heat up some oil, and start frying the patties in batches to not overcrowd the pan. Cook them until both sides are nice and golden brown, then transfer them to a rack or paper towel-lined plate to drain off excess oil, and then place them on a serving plate. Serve and enjoy!
