Step 1
Give the green tomatoes a good wash and scrub well using your hand to remove any dirt residue. Slice them into ¼ inch thick each, then transfer them to a surface or tray lined with paper towels to drain off excess moisture. Sprinkle them with salt, flip over and sprinkle on the other side as well. Leave them while preparing the dipping sauce. In a large bowl, mix together the mayonnaise, Dijon mustard, yellow mustard, minced garlic, Worcestershire sauce, hot sauce, cayenne pepper, smoked paprika, juice of half a lemon, chopped scallions, and chopped capers, whisk them until well combined, then set aside.

Step 2
Place a cast-iron skillet on a stove over medium-high heat, then pour the cooking oil until about 1 to 2 inches high. While letting the oil heat up, prepare 3 different bowls for the batter. In the 1st bowl, combine the self-rising flour, garlic powder, onion powder, and black pepper, whisk them until uniform then set aside. In the 2nd bowl, whisk together the cornmeal and breadcrumbs until uniform, then set them aside. In the 3rd bowl, beat the eggs, then pour in the buttermilk, whisk them together until uniform and set aside. Dredge the tomatoes in the flour mixture, then coat in the egg mixture, and lastly in the cornmeal mixture. Start frying them in batches to not overcrowd the tomatoes, cook for 4 minutes on each side until brown and crispy. Serve with the prepared dip.
