Filling
Topping
Step 1
In the bowl of a stand mixer, add the flour, sugar, yeast, and salt, then give them a good mix, add the milk and egg, and continue to beat over medium speed for about 3 minutes. Add the butter, then keep kneading for about 3 to 5 minutes or until smooth and elastic. Transfer the dough to a floured surface, then knead it until smooth ball, and place it in a well-oiled bowl coating it with some more oil as well. Cover the bowl, then set it aside, and let it rest for about 1 hour or until double in size.
Step 2
In another bowl, add the chopped pistachios, butter, and powdered sugar, then mix them until well combined, and set the filling aside. After an hour, punch and degas the dough, then roll out the dough into a rectangle at 15×20 inches, and spread the pistachio filling over it evenly. Cut the dough into six 2.5-inch strips, then roll each strip tightly as shown in the video, and place them in a 7×10-inch baking dish greased with butter.
Step 3
Cover the rolls and let them rest for about 30 minutes and preheat your oven to 170°C or 340°F for 15 minutes. When the rolls are ready, drizzle some heavy cream over the top, then place them in the preheated oven, and let them bake for about 25 minutes or until golden. Remove the rolls from the oven, then let them cool down, and prepare the topping while waiting. Add the cream cheese, butter, and powdered sugar in a bowl, then mix them until light and fluffy, and spread it over the rolls. Serve and enjoy!
