Mississippi pot roast is honestly a family favorite, well, in our household at least. We always have it for dinner and it doesn’t disappoint, every time I serve it to the table, we always end up with a full belly and empty plates, because this dish is that good. I always follow this recipe by The Slow Roasted Italian on YouTube because it’s very easy and quick to prepare, plus, it only requires 5 ingredients. This is perfect especially when I still need to prepare other dishes because I can just leave it to cook in the slow cooker while I go make other food.

Ingredients:

  • 3 to 4 pounds of boneless chuck roast
  • 1 (0.4-ounce) packet of buttermilk ranch dressing mix
  • 1 (1-ounce) packet of au jus mix, or use dry onion soup mix
  • 10 whole pepperoncini peppers, plus ½ cup of juice
  • ¼ cup of ½ stick of butter

Optional

  • Fresh Italian parsley, chopped, garnish

Directions:

Step 1

Place the roast at the bottom of a slow cooker, then sprinkle the ranch dressing mix and au jus mix all over the top, and scatter the pepperoncini peppers all around and on top of the roast. Cut the butter into smaller pieces, then add them on top of the roast, and then cover the slow cooker with the lid. Allow it to cook on a low setting for about 8 to 10 hours or a high setting for about 4 to 5 hours.

Step 2

After a few hours, check if you can easily shred the meat apart with barely an effort, if it’s not at the desired tenderness, then let it cook for another hour, and once done cooking, remove any large pieces of fat. Shred the beef using 2 forks, then sprinkle it with freshly chopped parsley if desired, and serve. Enjoy!
