Most of us almost always have busy days that it’s a challenge to even prepare a hearty meal. We sometimes settle for the simplest food our time allows us to make, but simple foods don’t have to be boring, that is why slow cookers are invented. It makes mealtime manageable and enjoyable, just dump the ingredients in and for a couple of hours for it to cook while you’re keeping yourself busy with your daily tasks. Once done cooking, you’ll be able to enjoy and have a satisfied tummy with a delicious and hearty meal, without the hassle of course. One of my favorite go-to recipes is this one by TosTinMan EasyCooking on YouTube, over time I tweaked his recipe and made my version which I still cook often.
In a slow cooker, pour equal parts of rice (you can use brown rice as well), frozen mixed vegetables, and water. Then add in the crumbled chicken bouillon cube, pepper, and onion powder, mix it very well. Then get the chicken thighs out of the packet and wash them well. Pull the chicken skin out from it or keep it in if you prefer. Season with mild BBQ rub on both sides then place them on top of the rice mixture, place the lid on the slow cooker and let it cook on high for about 2½ – 3½ hours. Transfer on a plate and serve, you can add soy sauce to it because this recipe isn’t that salty.
