Step 1
Place a large and deep oven-proof cast-iron skillet or pan on a stove over medium-high heat, then heat up some oil before adding the chicken with its skin side down. Cook them for about 3 minutes for a nice sear. Make sure to turn each piece of chicken so that both sides are cooked evenly, then remove them from the pan, and transfer them to a plate. Using the same pan, add the garlic and fry for about 30 seconds or until it becomes fragrant. Then, add the onion and red peppers, and saute them for about 3 minutes or until translucent. Add sun-dried tomatoes, rice, crushed tomatoes, and chicken broth, then give them a good stir.

Step 2
Season them with salt, pepper, and dried basil, then bring them to a simmer. Put the pieces of chicken back into the pan, on top of the rice and with its skin side up, then let it boil. Rotate chicken in the tomato sauce until well coated, then cover the pan with a sheet of aluminum foil. Pop it in a preheated oven at 400°F and let it bake for about 40 minutes or until the rice and chicken are cooked through. Add more water for the rice if needed. Remove the foil then broil over medium heat for an additional 8 to 10 minutes or until the chicken is crispy and golden brown. Season with salt to taste, then garnish with freshly chopped basil. Serve and enjoy!
