Step 1
Preheat your oven to 375°F, then place a large oven-safe skillet on a stove over medium-high heat, add the olive oil, and heat it. Generously season both sides of the chicken with salt and pepper, then place them in the skillet with their skin side down.
Step 2
Sear them for about 4 to 5 minutes or until crispy and golden, flip them over, then sear the other side for 4 to 5 more minutes, and transfer them to a plate. Turn the heat down to medium, then in the same skillet, add the garlic, oregano, and red pepper flakes.
Step 3
Stir and saute them for a minute until fragrant, then pour in the broth, heavy cream, sun-dried tomatoes, and Parmesan cheese, and give them a good stir to combine. Adjust the seasoning to taste with more salt and pepper if needed.
Step 4
Bring it to a simmer, then place the cooked chicken back into the pan with the skin-side up, and then transfer the skillet to the preheated oven. Allow the chicken to bake for around 15 minutes or until the chicken is cooked through, then garnish it with parsley or basil, and serve. Enjoy!
