Step 1
In a medium-sized mixing bowl, add the chicken, soy sauce, Shaoxing wine, and cornstarch, then give them a good mix to combine, and set it aside to marinate for about 10 to 15 minutes. In a small bowl, add the chicken broth, light soy sauce, Shaoxing wine, dark soy sauce, cornstarch, sugar, black pepper, and salt, then give them a good whisk until uniform, and set the sauce aside for later.
Step 2
Place a large skillet on a stove over medium-high heat, then add a tablespoon of oil, and heat it until hot before adding the marinated chicken. Spread the chicken in a single layer, then let them sear for about 30 seconds until lightly browned, flip them over, and cook for another 15 to 20 seconds until both sides are evenly browned.
Step 3
Transfer the cooked chicken to a plate and set them aside, add the remaining oil to the pan, and add ginger and garlic. Give them a good stir and cook until fragrant, then add the white onion and peppers, stir them well to combine, and cook them for 20 more seconds.
Step 4
Give the sauce a quick stir to make sure the cornstarch has dissolved, then pour it into the pan, and stir them well to combine. Cook it for a few seconds until the sauce has thickened, then put the cooked chicken back into the pan, and mix them until well coated. Turn off the heat, remove the stove from the pan, and transfer the meat to a serving dish. Serve immediately and enjoy!
