Shrimp and veggies sound like a great combination and I realized that they really are when I found this recipe by Racquel’s Caribbean Cuisine on YouTube. This stir-fried dish is so delicious and healthy that you can eat a lot of servings without feeling guilty.

You can serve this for lunch or dinner, and you can even modify all of the ingredients to your liking so that you can use any leftover veggies that you have and even level it up by throwing in some sausages!
Step 1
Clean, wash, and devein the shrimp, then add them to a large bowl and season them with salt, black pepper, and all-purpose seasoning, you can add any seasoning that you want. Prepare the veggies and set them all aside. Place a wok on a stove over medium-high heat, then add the butter, and let it melt.

Step 2
Add the seasoned shrimp, then spread them in a single layer, and cook them for 1 minute per side for a total of 2 minutes, make sure not to overcook the shrimp. In the same pan, add the chopped onion, garlic, and pimento peppers, then stir everything well, and fry them for a few seconds.
Step 3
Add the bell pepper, carrots, green beans, and broccoli, then continue to stir fry for a minute, and season them with some more salt, old bay seasoning, and parsley. Continue to stir-fry for 2 to 3 minutes over medium-high heat, and turn off the heat. Serve and enjoy!
