This delicious shrimp scampi is a dish that you can make quickly in as fast as 20 minutes and it is very easy to prepare, too. This is the perfect dish to serve for dinner along with some wine if you want or on an ordinary mealtime, you can also make this in a larger batch if sharing with a crowd.

Ingredients for 20-Minute Shrimp Scampi:

  • 1 pound of large shrimp, peeled and deveined
  • 2 tbsp of extra virgin olive oil
  • 4 tbsp of unsalted butter, plus 1 tbsp more
  • 3 cloves of garlic, minced
  • A pinch of hot pepper flakes
  • 1/3 cup of dry white wine or chicken stock
  • 1-2 tbsp of lemon juice
  • 3 tbsp of freshly chopped parsley
  • Salt, to taste
  • 8oz of spaghetti

Step 1

Place a large skillet on a stove over medium heat, then add the olive oil, and season the shrimp with salt before placing it in the hot oil. Cook them for about 1 minute per side until nice and pink, then remove them from the pan, and set them aside on a plate.

Step 2

Add more olive oil, the butter, and minced garlic, and saute them while melting the butter making sure to heat them on low. Meanwhile, prepare the spaghetti according to the package instructions.

Step 3

Pour the stock into the skillet, and give it a good stir to combine. Add the lemon juice and hot pepper flakes, then give them a good stir, add the parsley and some of the pasta water, and give them a good mix.

Step 4

Add the cooked shrimp back to the pan, then gently cook them, add the drained and cooked pasta, and give them a good toss to coat. Add the remaining butter, let it melt, give it a good toss, and adjust the seasoning to taste. Serve and enjoy!
