Ingredients:

  • 3/4 cup fresh lime juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh orange juice
  • 1 lb shrimp, peeled and deveined
  • 2 Roma tomatoes, seeded and diced
  • 1/3 cup finely chopped red onion
  • 1/3 cup chopped fresh cilantro
  • 1 jalapeno, seeded and diced
  • 1/2 tsp salt
  • 1 avocado, diced
  • tortilla chips

Directions:

Step 1

To start, combine 3/4 cup fresh lime juice, 1/4 cup fresh lemon juice, and 1/4 cup fresh orange juice in a bowl. Reserve 1/2 cup of the juice mixture and set aside for later use. Next, cut the deveined shrimp into 1/2″ pieces, then put them into the juice mixture. Make sure every shrimp pieces are soaked in the solution. After this, cover the bowl and pop it into the fridge for 30 minutes to let everything marinate. In the meantime, prep the rest of the ingredients. Dice two Roma tomatoes, chopped 1/3 cup of red onion, chopped 1/3 cup of fresh cilantro, and dice one jalapeno.

Step 2

After 30 minutes, remove the shrimp from the fridge and drain them. Add the diced jalapeno, red onion, tomato, and cilantro. Season with 1/2 tsp salt and toss everything well. Now, add the reserved juice and cover the bowl again. Place it in the fridge for an additional 30 minutes. After 30 minutes, dice the avocado, then add it to the bowl. Gently stir everything together and your shrimp ceviche is now ready.
