Ingredients for 7Up Shirley Temple Pound Cake:

Pound Cake

  • 3 cups of all-purpose flour
  • 2 cups of granulated sugar
  • 1½ cups of unsalted butter, at room temperature
  • 5 large eggs, at room temperature
  • ¾ cup of Cherry 7Up, at room temperature
  • ½ cup of maraschino cherries, cut in half, juice reserved
  • ½ tsp of salt
  • ½ tsp of baking powder
  • 2 tsp of vanilla extract
  • 1 tbsp of cherry juice

Glaze

  • 2 cups of powdered sugar
  • 2 tbsp of maraschino cherry juice
  • 2 tbsp of milk
  • Maraschino cherries, for topping

How to Make 7Up Shirley Temple Pound Cake:

Step 1

In the bowl of a stand mixer, beat the butter, then slowly add the sugar, and beat continuously for about 5 minutes or until creamy. Add the vanilla extract and eggs one at a time while beating continuously, then add the flour a little at a time, and keep mixing until combined.

Step 2

Add the soda and cherry juice, then mix them some more until incorporated, scrape the sides, and fold the batter nicely. Add the cherries, then fold until evenly incorporated, and transfer the batter to a bundt pan spreading it evenly and smoothing the surface as much as you can.

Step 3

Place in the oven preheated at 325°F, then let the cake bake for about 1 hour and 15 or 20 minutes or until a toothpick inserted at the center comes out clean and allow it to cool completely.

Step 4

Flip the cake over to a serving plate, then beat the powdered sugar and milk in the stand mixer to combine, add the cherry juice, and keep mixing until incorporated. Pour the glaze over the cake, then top it with the reserved cherries, and serve. Enjoy!
