Ingredients:

  • 2 tbsp. garlic olive oil
  • 4-6 tbsp. butter
  • 1 cup of shrimp
  • 3-4 cloves of garlic
  • 1/4 cup chicken broth
  • 1 cup heavy cream
  • 2 tsp. creole mustard (or dijon mustard)
  • 1 tbsp. creole kick (or any creole seasoning)
  • 1/4 cup parmesan cheese
  • 1 tbsp. lemon juice
  • 1 tbsp. parsley
  • 1/4 cup cheddar cheese
  • 6 slices of thick-cut bacon
  • lump crab meat (or claw meat)
  • 4 russet potatoes
  • salt flakes (flaky salt)

Directions:

Step 1

Preheat the oven to 350 degrees F. Start prepping the potatoes. In a bowl, coat the potatoes with olive oil. Next, get a fork and prick the potatoes all over just to release the steam while it’s in the oven. After this, sprinkle some flaky salt over the top, making sure the potatoes are nicely coated. Put them in the oven and set the timer to one hour.

Step 2

(Do this 20 minutes before the potatoes in the oven finish baking.)

Fry the bacon in a pan, then chop it into small pieces. In the same pan, melt the butter and sprinkle a pinch of creole kick. Add the shrimp and cook both sides evenly; set aside. Back to the pan, fry the pressed garlic quickly to avoid it getting burned. Add the chicken stock, followed by the heavy cream. Bring the sauce to a boil, then add the creole mustard and creole kick. (Stir the sauce continuously.) Add the parmesan cheese; let it melt. When the sauce thickens up, time to add the lemon juice. Chopped up some parsley and tossed it into the sauce together with the shrimp. Lastly, add the crab meat.

 

Step 3

After an hour, pull the potatoes out of the oven and put them on a plate. Using a fork, gently pop a few holes over the top of the potatoes. Get anything that can protect your fingers from the heat then grab the potato on both ends. Push it to the center until it opens up. Start assembling the baked potatoes. Put the grated cheddar cheese over the top, then add the sauce over it. Finally, sprinkle the chopped fried bacon.
