Step 1
Line a 10×15-inch baking sheet with aluminum foil, then lightly grease it with a nonstick cooking spray, and preheat your oven to 400°F. Place the crackers on the prepared pan in a single layer and set them aside, then place a medium pot on a stove over medium heat, and add in the brown sugar and butter. Give them a good stir until completely melted, then keep stirring for about 5 minutes until the sugar is incorporated and smooth, and turn off the heat.

Step 2
Add the vanilla extract, then give them a good stir, and allow the mixture to thicken. Drizzle the caramel over the crackers evenly, then spread it around until completely covered, and put it in the preheated oven to bake for 5 minutes until bubbly. Remove it from the oven, then sprinkle the chocolate chips all over the top evenly, and put it back in the oven to bake for another 2 to 3 minutes until the chocolate chips have slightly melted.
Step 3
Remove it from the oven, then spread the chocolate evenly on top, and garnish with sprinkles, crushed nuts, or crushed peppermint candies. Let it sit on the counter to cool completely, then transfer it to the refrigerator, and allow it to chill for about 1 hour or freeze for 30 minutes until solid. Break the crackers into pieces, then transfer them to a serving platter, and serve. Enjoy!
